I love to bake this tomato flavored bread. It is orange colored and this bread really does taste like pizza! You can omit the herbs/ spices and use 1.5 teaspoons of a pizza spice blend .
There are more than one way of eating this.You can toast it for breakfast, make grilled cheese sandwiches or even shape slices into bite sized pieces and top with a little sauce, some vegetable mixture and cheese and toast under the broiler.
I was planning to make some stuffed buns with potato, red bell pepper and dill. I had to also use up the tomato puree that was lying in the refrigerator. I had made this puree, 2 days back and still had not decided what to cook using it. Finally I made a tomato bread and stuffed it with the potato-dill mixture. I did not add cheese into the bread dough as I was adding cheese in the stuffing. If you are planning to bake just a tomato bread without stuffing, then add cheese into the dough along with herbs.
You can also use this colorful potato mixture as a topping for your bread slices or use them to make stuffed buns.
Kneading the dough-
As always, I let my bread machine do the mixing and kneading although I’m sure you could also use a stand mixer or do it by hand. After dough has risen once in my machine, I take it out and make whatever shape I want, let it rise a second time in a warm place and bake it in my conventional oven.
I knead the bread dough in the bread machine because of the minimal attention required. A peek or two into the pan about 5-10 minutes into the dough cycle is all that’s necessary (Do not be scared to open the lid in between the cycle, in fact it is highly recommended.This way you can adjust the consistency of the dough). Besides this there is only one pan and one blade to clean.
Shaping and baking-
You can bake bread in a bread machine with ease, but not stuffed breads or buns and shaped breads. So I bake bread loaves in the bread machine. And whenever I want to make rolls, various stuffed buns, pizza- I knead the dough in the bread machine and bake them in the conventional oven.
But this time, there was hardly any hands-on time. For making stuffed buns you need to knead a dough, stuff and shape each bun, search for a warm place for the proofing stage and baking them in batches. A bread machine takes care of it automatically except stuffing and shaping. I decided to trick the machine and was successful.
I put everything that was needed for the tomato bread, into the bread machine pan and switched on the french loaf programme. Once my dough was kneaded and ready, I opened the bread machine and removed the dough out onto a floured counter. Next I shaped into a rectangle and arranged the stuffing, rolled it into a log and the put it back into the bread machine pan without the kneader blade.Then I switched on the bread machine (Only thing to take care of is the time, dough should be replaced within 10 mins. My machine remains in the same programme for 10 mins after you switch it off ). The bread machine continued with it's baking and while I was doing other things.
I have used rice bran oil. You can use olive oil or any light flavored oil which will not overpower the bread flavor.
Tomato bread stuffed with red bell pepper, cheddar cheese, potatoes and dill
For the tomato bread-
Wet ingredients- (all these should be at room temperature)
1 cup tomato puree (home-made)if using store brought puree or paste take 4 tbsp of it mixed with warm water to measure 1 cup)
2 tbsp tomato ketchup
1 egg (lightly beaten) or use 50 ml of yoghurt
1-2 tbsp oil (olive oil or any neutal oil, I used rice bran oil)
3 cups refined flour (maida)
1.5 cups whole wheat flour (If you are planning to replace plain flour with more wheat flour add 1 tbsp vital gluten for each cup of wheat flour)
1/8 tsp bread improver (optional)
1/2 tsp chilli pd
1.5 tsp instant dry yeast
1 tbsp sugar
3/4 tsp salt
1.5 tsp Mixed dry herbs
1 tsp White sesame seeds
For the filling-
2 tbsp oil
2 tsp finely garlic cloves
1 cup chopped onion
1 cup chopped red bell pepper
1.5 cup potatoes (peeled and cubed) You can boil or roast them
2 tbsp chopped dill leaves
2 heaped tbsp of cheddar cheese (cut into small pieces)
1.5 tsp Pav bhaji masala (you can use garam masala)
Preparing the filling-
Heat 2 tsp oil in a non-stick pan and fry the cubed potatoes for a min, then cover and cook till it is golden. Keep shifting them with a wooden spoon for even cooking. You can mash the potatoes after roasting or boiling. Keep this aside.
Heat rest of the oil in a pan and fry garlic till they turn slight golden.
Put in onions and fry till they turn translucent.
Add the chopped red bell pepper, dill, salt, amchur pd *(optional) and pav bhaji masala and fry for 3 mins.
Mix in the roasted potatoes and fry for a minute.
Cool this mixture.
*Squeeze 1/2 a lime or lemon. or you may add 1/2 tsp amchur (dried mango powder) during cooking for a tart taste.
For the bread dough-
Put in all the wet ingredients into the bread machine pan.
Next put both the flours. Place the yeast, sugar, bread improver, gluten, herbs and cheese (if using) on this flour heap.
Place the salt away from yeast.
Do not mix or stir.
Close the lid and switch to 'french bread' mode (avoid 'quick yeast bread' mode as it requires more yeast).
When the dough is ready switch off the machine by switching off the power.( not the button on the machine).
You can knead the dough with your hands or use an standing mixer or a food processor too.
For shaping and baking the bread-
As this bread is made using instant yeast and the bread machine is warm during kneading, I have not given the dough, a first rise.
If you have kneaded the dough without bread machine, allow the dough to double.
Gently remove the dough and place it on a floured counter, remove the kneading blade stuck in it.
Pat the dough gently to remove the gas from the dough.
Flatten the dough on a floured counter or silicon mat.
Spread it into a rectangle and place the filling evenly on the dough leaving 1/2" on all sides.
Sprinkle the cheese pieces over the filling.
Roll the dough from one end to form a log.
When you have reached near the other end stop rolling.
Pull the other end over the log and seal the edges.
Push the log slightly with your hands to shape it into a size to fit into the bread machine.
Place the shaped and stuffed bread dough gently into the machine pan.
Sprinkle the white sesame seeds on top.
Close the machine and switch on the power.
The bread will bake. Remove the bread out of the pan and slice it into thick slices after it cools.
1 big loaf in bread machine or
2 loaves of bread in the conventional oven or
8- 12 stuffed buns
Slice them thickly.
If you want thin slices you should add mashed potatoes into the stuffing.
You can fry these slices on a non-stick griddle if you want to eat them warm.
For making plain tomato bread- Add grated cheddar cheese into the dough. Remove the kneading blade after the kneading. Leave the bread dough in the machine. when it rises sprinkle sesame seeds and let the machine bake the bread.
